Roasted Curried Fruit

In the Autumn I love roasted fruit with curry, any canned fruit assortment, (I like pears, peaches, apricots, pineapple) just a little of the liquid from the fruit, season with your own tastes with curry powder. Roast in 400 degree oven 25 minutes, serve with pound cake, or ice cream, or just dish up a serving plain. Very tasty.

PS Forgot, throw in a handful of raisins and some toasted almonds!

Noel, bilimbi is a relative of the starfruit, but they are more cucumber in shape, same crunchiness, but lemon tart. They do still have a star pattern in the seeds inside.
They grow in clusters right off the trunk & older branches. Used a lot in Filipino dishes & curry pickles & such (much like mango pickles....I think...)
