If you go above or below that range, there are other life forms in the air which may grow faster than yeast in your starter. RE: Hoarding and baking bread - allensylves - 04-14-2020 When I was baking bread, I learned that salt inhibits yeast. Therefore, the less salt you use, the less yeast you need. Allen Finally in HPP RE: Hoarding and baking bread - kalianna - 04-14-2020 I always make my own bread, very similar to Terracore's: 4 c whole wheat flour 3/4 t instant yeast 2 t salt 2 cups water. Mix just a little bit, let rise 6-18 hrs(depending on weather) until bubbly on top empty onto floured board, let sit 15 min. turn a few times, let sit 90 min preheat oven with dutch oven in it for 30 min. Bake 25 min., remove top, take 5-10 min more until browned. Remove from pan and cool on wire rack. No parchment needed, bread doesn't stick.
