I thank everyone for their input but to clarify one thing, we have been coming over to the BI for several year with much time spent in Hilo and we are pretty familiar with Pahoa. My initial idea was to create samples, take them to Makuu Farmer's Market and possibly secure orders from there. More cheesecakes and such. Wedding cakes probably be by word of mouth. RB is my partner and we hope to have our house finished next year so we will be living in Orchidland. Just looking to see what potential there might be for this type of art. Mahalo to all Ed RE: Pastry Chef in Puna - Hilo/Pohoa - emorata - 09-05-2007 ed, to start on a small scale, you might want to just sell your pastries at very well attended farmers markets at makuu and volcan and the locals do support local vendors...when you become more successful at these venues, that usually supports starting a storefront...thats what alot of the locals have done and others just keep the farmers market approach to keep costs at a minimum and work out of their kitchens. good luck, i'd buy all my bread and pastries from you especially french bread/pastries. noel RE: Pastry Chef in Puna - Hilo/Pohoa - janeadams - 09-05-2007 Bagels with great schmere and a superb cup of coffee... I have made cakes for many years, 2 wedding cakes to be proud of. I have a menu of some good cheese cakes, not to mention some tasty pies. As the news comes out on various products and their ingredients (high fructose corn syrup for example), one tends to want to make their own. Ever try to find an English Muffin without HFCS?
