Fly Kevin Tate over from Oahu and have him cook you a dinner. Kevin is one of Oahu's great chef's. His ribs are the best I've ever had, hands down. He used to be a private chef for some super rich guy, ran the best cajun restaurant on Oahu, "Kevin's Two Boots" and now does catering when he's not teaching for the culinary arts program and HCC.
He was the caterer at my wife and my wedding reception and the ribs and gourmet mexican food he served blew everyone's mind. People who were there still talk to me about it to this day.
For the same dinner, hire Royall to work more culinary magic and invite us all over for dinner! It would be a legendary food event. Folks would pay bucks to experience that.
Barring that idea, Kaleo's is da bomberoony. Especially on the nights when the great Maggie Heron and Paul Lindberg are playing their world class, classic jazz music.

Ed,
If you'll be on Oahu, treat yourselves to a dinner at, La Mer, at the Halekulani Hotel on Waikiki Beach. It's literally the best of the best and $200.00 for dinner for two would be easily done. Back when I was their house musician, I saw everyone from Sugar Ray, to Saudi princes eat dinner there. Solid five star restaurant.
Eat there once and you will never forget the experience.

You should be able to get a room at the Seaside for $75.00 a night. Parking there can be tough if Hilo is crowded.
If you're willing to spend the $$$ for your anniversary dinner, if it were me I'd make the drive to Volcano and do Kilauea Lodge. Food is great at Keawe kitchen but the Kilauea Lodge would be more romantic. And there is no place more romantic than Volcano Village. Just bring a jacket.
Kaleos is definitely worth it if Maggie Heron is there. She is amazing.

Seaside - rates listed are $87 w/breakfast - $74 w/state ID but doesn't mention breakfast at that rate
That reminds me....do you have a state ID? If not you may want to get one.... there are many attraction discounts for residents (including hotels, rides, admission fees & such) that have a state ID - property owners may need to have their tax bill or bill of sale documents, or renters can bring in rental lease. Carey, I am going to attempt to get a state ID while I'm there. There are some savings, but mostly I'd just feel proud to have a Hawaii ID! lol

So in order to get an ID you have to make an appointment. And you don't get it at the building listed on the state website. I wish they would update their website, would have saved us a lot of hassle and driving.
We ate at Kens last night. The menu and surroundings were amazingly neat. The customer service was poor and the steaks we ordered were tough, and without flavor. That should be illegal to cook a new york that way! lol I got kind of a "surf and turf" type dish and while my steak was ruined the fish was cooked to perfection and delish!
Just wish the customer service was better. It was pretty packed and busy so I guess it must be a popular place. I'm not sure we'll be going back.
I think tonight or tomorrow we are going next door to kens to try Sombats Thai.

Sombats is very good, but more pricey than many of the Thai offerings in Hilo (Full Moon, Tinas Garden, Chiang Mai among the choices)....There are a lot of good-very Thai venues here... so a lot to enjoy.... Kens is not really known as a steak house...although Wed. is prime rib night....and they do an OK job at that... they are best at breakfast, and their pancake/waffle syrups & Sumo Locos....(who in the world can eat 6 scoop rice at a sitting!crazy!)
remember to try the beer battered mahi tomorrow lunch behind Suisan (best to get there before or close to noon)
