We are timing our next trip over to coincide with the annual Fern Acres community picnic. The food is catered, but the dessert is potluck- we will be camping, so looking for suggestions on what kind of dessert we could bring...

you can either buy or make....fruit is always good/no cook....you can always BUY cookies, cakes & mochi from the store is never bad ( esp 2 Ladies strawberry mochi) simple things like purple sweet potato & haupia are fairly easy if you can boil & have a dish (packaged haupia is simple, but even better if you want to totally home (camp) make the haupia from picked spoon meat coconut & tapioca or cornstarch) jello (multi-layer are very popular)

Thanks Carey- not sure if I could do Jello (hard to get it to set in a cooler) but maybe a layered haupia / chocolate pudding pie (I could buy a pre-made graham cracker crust) or some variation thereof...
