dehydrated fruit and veggies - asly - 09-18-2009 So, in the Puna and surrounding high humidity areas, has anyone had any success in dehydrating fruit and/or veggies, and further in storing them when dry? I'd be interested in someday making a granola or something similar with island fruit to enjoy when not on the islands. RE: dehydrated fruit and veggies - Devany - 09-18-2009 I live in Hilo Asly, where it is plenty humid, but not as bad as inland areas. I have done some dehydrating and if you cryovac immediately after drying it stays dry. The actual dehydrating process may take a little longer and it is best if you use really thin slices. You could bring cryovaced dried fruit to the mainland but not fresh fruit. What type of dehydrator are you using Devany? Thanks, Ann RE: dehydrated fruit and veggies - Devany - 09-18-2009 I have a Bradley smoker that I use for making dried meats/jerky and an Excalibur 3900 for fruit, flowers and veggies. If you are buying one to use here, do not get a stainless steel or metal one. Plastic is far better for this climate.
