Is yours a chewy candy, a brittle candy or a fudge like one? Actually all are good... just would love to revisit the candy mom made! RE: coconut candy - Royall - 01-31-2010 Here is a recipe that I've got in my online cookbook at Allrecipe.com. Someday I'll make it! Makes 12 Ingredients * 1 1/2 cups milk * 4 cups white sugar * 4 cups flaked coconut * 1 dash vanilla extract Directions 1. In a medium saucepan over medium heat, stir together milk and sugar until smooth. Heat, without stirring, to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and stir in coconut and vanilla. Let cool slightly. 2. Drop by rounded spoonfuls onto waxed paper lined sheets and let cool completely.
