Just received a new cookbook from Costa Rica and plan to work my way through it a recipe at a time. Some I will have to save for our Hilo visit in October to take advantage of the fruits I cannot find here.
Quite a few of the recipes call for young coconut meat. Do you know if I would be able to find this at Makuu or the Hilo Farmers markets?

Yes, easy to find at Hilo, Makuu, Seaview and Pahoa markets. Sometimes there is a fellow at four corners who sells them and on the old gov./honolulu rd, there's a nice guy who sells them and also weaves hats and bowls, just look for "the weaver is in" sign.

Radiopeg, intersection of highways 132 (pahoa-kapoho) and 137 ("red road").

Susan, many here asking for young coconut meat ask for "spoon meat coconut", because it is still more gelatinous and spoonable (almost looks like haupia)
