Yeah, considering a MOFI, but it doesn't yet support the new 600MHz LTE bands coming soon. My little hotspot has no external antenna connection. I may just put a booster antenna up on the pole, with the main unit in the house.

Boosters are generally crap. Putting the LTE hotspot on a pole is a much better hack.
You will want to massively oversize the power feed; I would use 12-gauge landscape lighting cable.

For the price of a pelican box you might just look at getting a Mikrotik or ubiquiti device that is designed for outdoor use and are maybe as cheap as the router your looking to put up. They are all POE (Power over Ethernet) have all the bells and whistles and will operate trouble free for years.
