I don't know how large some of these establishments are, but just pick a number, say 800 square feet so $4000/month. Paying four employees 12 hours a day, your labor costs are $40k/month. So you got to clear $44k/month just for the rent and employees. On top of that you have utilities, and of course you have to buy the food and drink you're serving. That's how you get a $14 slice of avocado toast. I don't think greed has much to do with it, competition (capitalism) takes care of that.
