The big problem, as I understand it, with wild boar is that local's smoke it but then don't really COOK it. There is no reason for it to be unsafe that I know of but I cook pork to death.
The wild pigs have very very little fat on them. It actually makes the meat a little more tough, so they need to be marinated im lots of salty stuff and then cooked long and slow.
We have pen raised a few "wild" pigs and the meat was wonderful. Nice marbled meat from eating whole papaya and banana leaves. Yum!
Our sheep are eating not only "sheep ration" from the feed store and some occasional alfalfa, but also lots of papaya every day, leaves from banana, ginger and wiwi. Flavor should be great. Wonder if I can get them to eat garlic???? LOL
