Does anyone know where I can find a list of commercial kitchens in
Pahoa, Keaau or Hilo? Thanks in advance.

Just look under restaurant listings in the local Yellow pages. Any restaurant open to th public will have to have a commercial kitchen or any other foodservice establishment open to the public such as hospital kitchen, cafeteria, banquet rooms, etc.

If you have a legit reason to know your local Health Department will have a complete list.

The Health Department is a good idea, though.

If looking for a kitchen to rent for short periods, look at places like churches, meeting halls, clubs & such.

I think the WIC office in Keeau has one, & the Keaau Youth Business Center had the culinary arts mobile comm. kitchen, but haven't noticed it this year...link:

I do know that our church has used a commercial kitchen in another church, and that one of the future potential plans is to update our kitchen to meet commercial specs, with part of the reasoning to have a commercial kitchen that can be rented out for outreach AND an income stream...

I love to cook ethiopian foods and have thought about selling it to the pubilc. But the whole system of finding a certified kitchen is kinda turning me off. I wish I could percentage rent an eatery on their closed days.

Dayna, that is done in Hilo.... Tinas has had a couple of evening kitchens during the weekday evenings they were closed....

It is funny, Spoonfuls moved to Keaau out of the PKP mall so that they could have one day off... & I am sure that there are cooks (esp. with our culinary programs) that would like to cook one day.... but I have a funny feeling the logistics, liability & trust (you have to have a lot of trust to allow another cook into your kitchen when you are not there!) are major stumbling blocks....

(also teff flour was very hard to come by, I finally ordered it online, then Keaau Natural Foods started to handle it....maybe I asked enough...or maybe others also make injera..)

I just don't have the connections right now I think to make it happen. I'll keep working on my recipies making them better and better. I also like to make a special meat or potato dumpling with a hot thai sauce over it called Pel Meni. Delish. Someday.

Pog, are you an ethiopian cuisine lover? I know our family LOVES it. The hardest thing for me is preparing the injera. I usually end of having my husband either pick up some when he's in DC or I order it though the mail and freeze it. It takes 3 days to make it right and usually I don't plan my dinners that far in advance! lol I know I should just make some at home and freeze it. I don't know how 3 days of making a fermented sourdough type bread would even work in a commercial kitchen! Our family favorite is Dora Wat, I'm thinking of making it with rabbit soon since rabbit stews so well. And when I have a goat that's ready I'm going to make tibs with that. YUMMMMMMY!

As far as the Pel Meni, its a quick few minutes to whip that up! I'm happy to privatly send you the receipe if you give me your email. It's cool because it can be either meat or potato so vegetarians and meat lovers alike can have basically the same meal but with different stuffing.
