Another easy ethnic Veg recipe - Indian

This is called Channa Masala. Very easy and very delicious. All spices are available at the health food store in Keaau. Great source for fresh spices.

Black Mustard seed 1 or 2 tsp
Masala spice 2 tsp
One can of chick peas (garbanzo beans) drained
Curry powder 1/4 to 1/2 tsp
1/2 medium onion diced
2 or 3 tomatoes diced
Garlic 3 or 4 cloves finely chopped
Ginger about a tablespoon finely chopped
Juice of 1 lime
salt to taste

Add enough high-temp oil (peanut is best) to saucepan to coat the bottom. Heat. Add the mustard seeds and cover. When the mustard seeds stop popping, add the onion and cook until clear. Add the chick peas and cook in the hot oil for a minute or so with salt to taste. Add the chopped or diced tomato. Cook together for a couple of minutes. Reduce the heat to simmer and add the masala spice and curry powder and garlic and ginger. Cook covered on simmer for about 30 minutes or until the tomato becomes like a sauce. The sauce should be fairly thick. You can cook it low pretty much as long as you want. Taste and adjust salt and spice to taste and add lime juice. You can also use pomegranate juice. This is really delicious.
Note: The masala spice in Keaau is pretty mild. If you like your food hotter, when you add the onion, also add one or two dried chillies.
