Not quite sure HOW you would have a sushi buffet??? more to the point...not sure I want to know!
When we lived in Atlanta, one of our favorite places to eat late lunch was a local sushi buffet, all very fresh, reasonably priced. Always had to chuckle when one of the cooks, a very obviously non Japanese local guy brought out food from the kitchen.
each table also had a little sign reminding people, "eat your sushi rice". David
