Broken seal: the bacon is vacuum sealed to protect the meat from oxidation and is part of the preservation process. If the seal gets broken (there is a tiny hole in the packaging) the package gets air in it and the bacon turns a nasty grayish color. The seal is most likely to get broken when the meat is frozen because the meat no longer flexes with the package.
