I spoke with an aquarium fish shipper at air cargo a few years ago. He had a pallet of boxes stacked about 4 feet high going to Alaska.* He has to estimate the time the trip will take, and calculate the amount of water (containing air for the fish to breath) for every shipment to every destination. To much water and his freight costs go up, to little water and the fish die. If there is a flight delay the losses can be quite high. Unfortunately I didn't ask for details.
* The fish are placed into plastic bags, the bags are packed into cardboard boxes. Usually with some insulation lining the boxes as the cargo hold can get cold no matter where the fish are shipped.
