"China and Italy have 2 things in common, they get their fresh food from open markets and they are touchy feely with the food before they buy it. In Wuhan the raw unwrapped meat is handled and squeezed over and over until purchased. They have a way of deciding if the meat is tender if it bounces back or not when squeezed.

Damn. Whenever I buy Huli Huli chicken here I always squeeze all of the suckers to see which is the most succulent. I guess I need to give up that practice.
