to start on a small scale, you might want to just sell your pastries at very well attended farmers markets at makuu and volcan and the locals do support local vendors...when you become more successful at these venues, that usually supports starting a storefront...thats what alot of the locals have done and others just keep the farmers market approach to keep costs at a minimum and work out of their kitchens.
good luck, i'd buy all my bread and pastries from you especially french bread/pastries.
