If you can't dent the green bean when you bite it, then it is ready to roast. I put one layer of beans in a dry cast iron pan on the stove, medium high to high heat and stirring constantly. Have any smoke detectors turned off for coffee roasting. When the beans are just barely to the color I want them, they get spread out on a cold cookie sheet to cool off.
