Local Style Food(recipes)
#1
Do any of you good folks have a recipe for "local style" Teriyaki sauce? For those of you who don't know, there is a difference in Teriyaki sauces. The local style ones tend to be sweeter and thicker. They also don't have things like pineapple or bell pepper in them either!

So I guess what I need is a 'Teriyaki Dipping Sauce',thick & sweet!

I don't have a recipe, but I recently discovered Soy Vay Hoisin Sauce. It's thick, sweet and good on EVERYTHING!!

Been a very long time. But as I recall: Soyu in pot on stove with smashed ginger and garlic. Heat for a while. Remove garlic and ginger when you want. Start adding cane sugar as it heats. Add sugar and dilute with water until it floats your boat. Wisk in corn starch disolved in water to thicken to your liking. Remember it will thicken more after it cools.

As I recall, some of the local recipes have way more sugar than I care for now.

Met this guy through a friend.

He also hosted Bud & Tiki Jr in Honolulu a few months back.

This guy loves food and his blog gets in to the nitty gritty for making dishes local style. Lots to look at.

Perhaps we shouldn't regard Aloha as a requirement of the people of Hawaii and just be grateful when we recieve it?
