You could try buying already grown hens instead of chicks if you wanted to be certain not to get any roosters. They cost a bit more, but you start getting eggs right away.

Ask them to carry the Sex Link variety. The male chicks are a different color than the female chicks.
My personal favorite chicken is the Bared Rocks. Great disposition and easy to handle.
