Meat Processor

So I've been toying with the idea of raising goats for my own meat consumption and selling excess goats (still alive) as humane meat.

We've got this fabulous 3 acre guava orchard that I've got the goats living on and foraging.

My question is, well I've got two questions.

1. Is there a meat processor in town? Someone where I can drop off a live goat and show back up later and collect neatly wrapped packages of goat meat?

2. Is there anyone on Puna web that knows how to dispatch goats and would they be willing to trade services for meat?

I'm also going to be doing chickens, but I imagine after a little practice I can dispatch, gut, and package those on my own.

I'm still in the "buying breeding stock" phase so I don't have anyone needing to be butchered any time soon. I'm just finding out all I need to do before hand.

I'm also trying to decide between dwarf meat goats and boer meat goats. Obviously boers are larger, but dwarfs might be easier to process and freeze since they are smaller. I'm leaning towards the nigerian dwarf side.

There are 2 meat processors on island, that I know of, both do beef, Kulana also does process macnut feral pig, & custom lamb & goat:

contact Tom Asuno w/ Kulana Food off of Kawailani (little "rustic" side road) in Hilo (only found out about them when we picked up our stainless sink/counter)

You might also try Louie Santiago @ 479-8679.
I haven't used him yet but he came recommended to me.
I think he is mauka of Hilo.
