Admitting to using local lettuce is quite the stretch from admitting to not washing it and/or seeing slugs in it and serving it anyway. And lettuce is by no means the only local produce carrier.

Why would you make that statement if you didnt think it was you lettuce that the slug was in

Perhaps because he believed the woman, or he feels overly responsible, or was misquoted in the media, who knows? If neither Russell nor the employee saw the slug in the food they are making an assumption not repeating a fact. I say since she was so quick on the draw to file a lawsuit and the fact that the slugs were out and about everywhere during the heavy rains it's important to evaluate other possibilities.
