my mom makes Kim chi and pickled daikon both. One time when she was making daikon and left it on counter over night she got up and wondered whose sewer had backed up. It doesnt get any better from there. SB loves that stuff so when she makes him a batch, I make her double ziplock the closed glass jar (JUST IN CASE!!!). I figured if we got in an accident on the way home, they would call the HazMat team.

Hi Mella - I haven't tried to make it yet, but Jeanette at the Maku'u Farmers Market makes an amazing kim chee with carrots, daikon, cucumber and seaweed. It's a sweet rather than hot version, using ginger and lemon rind. I am going to give it a go and think I will start with a basic recipe and then tweak it. I like the looks of this one, with some modifications:
