To all my fellow Chili Heads here on PW, I want to report on a great source for truly tasty salsa. Lava Salsa, he sells at Hilo farmers market and Makuu, not sure where else. His salsa reflect a true understanding of combining the heat of my favorite peppers "Naga Jolika,and Habanero" with others to make salsa's that have a terrific combination of heat and flavor. He will pretty much custom create a salsa to your specs, at least he has for me. If you like it hot I recommend his Ghost salsa, but even the wife who doesn't care for really hot dishes finds his milder forms to have great flavor. I'm not associated in any way with his operation, but I did want to pass on what I consider to be a real find. Enjoy[

Good to hear Dick. Thanks for sharing. I am a pretty mean Mexican cook myself having grown up primarily is the SW US - NM, AZ, CA - but am always on the lookout for tasty salsa and love finding a good small batch at a farmers market. Yum!

I'll third the recomendation. His salsa's are varied with traditional to non-traditional flavors that taste great. I think my favorite is the Pinapple a'a or something like that, it keeps changing... All I know is I've yet to be disappointed.

You're right Sean, the Pineapple is the wife's favorite and she normally doesn't like heat, but his salsa has a fine blend of sweet and heat that even a chili light weight like the wife can enjoy it.

I am a fan of heat and also of non-traditional. I am partial to green salsa's myself but there are so many great varieties. Mango lends itself nicely to a salsa too as well as pico de gallo and similar toppings. It is fab in sushi as well I must say.
