seems to be a sugar shortage in the news, anyone care to venture a guess how much of the US supply is still produced here in Hawaii?

According to this USDA report: http://www.nass.usda.gov/hi/speccrop/sugar.pdf Hawaii's sugar cane production is less than 6%, barely more than Texas. Florida and Louisiana produce the big producers.
