wetland plants

So we have an area of our property (Fern Acres) that looks like bog land- standing water, spongy soil, etc. we are looking for ideas on plants we could cultivate in those areas- preferrably edible, you know, for the apocalypse...

We thought of watercress, but it supposedly needs running water, which this isn't. Suggestions?

rice, some of the taro varieties, some bananas, some sugar canes, some ulu, most ginger, Hapu`u fern along with many other edible ferns, Hawaiian arrowhead,

I should also say that we only come to the property every 3 months or so, so looking for low maintenance []
