Avocadoes -- the fat of the land!

We've eaten avocados almost daily since last July.
Now, in March, the last trees are giving us the final delights until the season starts again in July (we are trying to find trees of Murishige and Linda varieties so we have a 12-month season).
Two new recipes we've used are definitely keepers and replace mayonnaise with avocado: deviled/stuffed eggs, and pasta/macaroni salad. Delicious!

Nice! May I ask what trees you have at present, that allowed you avocados from July to March?

Most of them (about 10) are old seedling trees in Pahoa. So, the 'varieties' are not known.
Want to find someone who is competent at grafting so we can get more trees going.
The one that starts in July is a grafted tree at our house in HPP and looks like the Hulumanu.

I finally figured out why my 7 year old avocado tree in lower HPP was always dropping all it's fruit. It was a grafted tree I purchased from Paradise Plants and when it started growing it produced suckers both above and below the graft and instead of cutting them off then.....I ignored them and they grew quickly to huge branches which I thought was just part of the tree...but it was actually sucking the life out of the fruiting part every year. I finally cut off the sucker branches last fall which were now about 4 inches round and now I have a avocado tree with more buds than I've ever seen. The real test will be in a few more months to see if they hold the fruit...but I think it will (hoping)

I have heard that an avocado a day will lower overall cholesterol dramatically to bring them into very good levels. Anyone have any proof that it helped theirs? I don't have a tree, so I don't eat one a day, but have excellant cholesterol already so no need for me. But there might be someone who has benefitted from this?

I am allergic to mayonaise, so I am always on the lookout for alternatives, and as James mentions, avocado can be a healthy substitution in many recipes, without sacrificing flavor. However, I don't use it if it would have to be cooked or heated. Yoghurt works better then. Or sour cream if you are not watching your cholestrol.

In both the pasta salad the avocado was added after the pasta was cooked, drained and still warm. In the stuff eggs, the eggs were hard boiled and cut in half; yolks removed; avocado was then added to and mixed with the egg yolks, then all was put back into the halved egg whites.

Avocado raises HDL cholesterol which is the good one.
