Evidently, my house is next to some hunting trails. One of the dogs came to our house and we fed it and called the owner- and he came out of the woods and gave me a big slab of pork- which I now have cooking in my pressure cooker. How awesome is that? Anyhow, I helped butcher a deer one time and it took like 3 days! How on earth do they cut up an entire pig on the trail? This is just incredible to me!

On my walks around Nanawale lately, I've come across pig carcasses that were left at the side of the road and only the large meat muscles were cut off, leaving much of the carcass. Sure does stink up the roads! The killings are at night, in the dark with homes near by, too.

OK, that makes more sense then. They shouldn't leave those carcasses to rot like that in a neighborhood. ON the other hand, I can only assume that people are mostly out hunting because they need the food. I am surprised they can do it in the dark at all. That must be pretty scary and noisy!

Responsible hunters (which is the majority of the Big Island hunters) use most of the pig. My students' families smoke pig meat, make sausage from it, and cook up the rest as lau lau. They say the guys who only take part of the pig and dump the rest are mostly looking for trophies (as in the skulls and tusks) and those guys are NOT respected (when 11-13 year old boys call someone irresponsible jerks, they are big time irresponsible jerks.) But when the stinky carcass gets dumped by your house, it probably doesn't matter if those idiots are the minority.

My house is in a residential area of Hilo, so I haven't had the "pleasure" of seeing any carcasses myself. The hunters were out on some county land closeby.

How did the pressure cooker pork come out Unknownjulie? I like to use a slow cooker to make kalua-style pork or pulled pork with BBQ sauce! Unfortunately, there are some hunters that poach in non-hunting areas, including private property. I think these are the same guys who leave pig carcasses in residential and other areas where they are a nuisance. Most of the hunters on the island obey all hunting regulations and respect private property. As for the TV series, I find it disturbing and wish they would take it off the air. Total false representation of our hunting community!
As for dressing game out in the field, most hunters will take only the meat and leave the non-edible parts in the field to decompose naturally. This would be out in the hunting areas, away from trails and places where they would disturb anyone.

Yep, cooked it with BBQ sauce because it seems like brisket to me. It took me awhile after I moved to Texas to adapt to this type of meat, but now I am hooked! It's great. The kids like it a lot.
