Just too much other stuff floating around in the air

Yeast, like yogurt grows best within a specific temperature range. If you go above or below that range, there are other life forms in the air which may grow faster than yeast in your starter.

When I was baking bread, I learned that salt inhibits yeast. Therefore, the less salt you use, the less yeast you need.

I always make my own bread, very similar to Terracore's:
4 c whole wheat flour
3/4 t instant yeast
2 t salt
2 cups water.

Mix just a little bit, let rise 6-18 hrs(depending on weather) until bubbly on top
empty onto floured board, let sit 15 min.
turn a few times, let sit 90 min
preheat oven with dutch oven in it for 30 min.
Bake 25 min., remove top, take 5-10 min more until browned.
Remove from pan and cool on wire rack.

No parchment needed, bread doesn't stick.

Thanx everyone for all your tips & recipes. Can’t wait to try the beer bread....just have to go get the beer! I’ll keep trying to get the “feel” of making bread here. We’ve been here over 10 years now, but this is the first time I’ve tried making bread.
