fruit into a dish????

My favorite dessert is fried apple bananas then doused with honey and served with a side of coconut ice cream.....really ono!

can you tell its a slow day at work for me.


mango chicken....yum

1 chicken breast
1/2 a mango
12 frozen green beans
A jigger of rum
A clove of garlic
Olive oil
Salt & pepper
PREPARATION:
Cut the chicken breast into 4 slices, trim away all fat and membranes, and flatten them with the blade of a knife.

Blanch the green beans in lightly salted water. Peel and thinly slice the mango. Lay slices of mango to cover over the chicken breasts, and three beans on each too. Roll up the breasts to make involtini and tie them with string. Sauté them in a lightly oiled non-stick pan, turning, until all the sides are browned.

Sprinkle them with the rum, season with salt and pepper, and cook over a low flame for 15 minutes. Remove them from the pan, remove the strings, cut the involtini into half-inch rounds, and serve.

The wine? I'd go with a white, perhaps a Sauvignon Blanc

another favorite fruit recipe i use

green mango salad....the alternate of green papaya salad


2 firm green mangoes (SERVES 4)
1/4 cup dry shredded unsweetend coconut (the kind you use for baking)
2 cups bean sprouts
1/2 cup fresh basil
3-4 spring onions, sliced
handful of peanuts or cashews, left whole or roughly chopped
Optional: 1 cup cooked chicken (sliced), cooked shrimp, or deep-fried tofu (cut into smaller cubes)
DRESSING:
2 Tbsp. fish sauce, OR 2 Tbsp. vegetarian fish sauce (available at Vietnamese food stores), or substitute soy sauce
2 Tbsp. lime juice
1 Tbsp. brown sugar (loose, not packed)
1-2 fresh red chillies, de-seeded and minced, OR 1-2 tsp. Thai red chilli sauce (or chilli-garlic sauce)
PREPARATION:

Place the coconut in a frying pan or wok (no oil required). "Dry-fry" the coconut (as if you were stir-frying it) for 2-3 minutes over medium heat, or until it turns a light golden-brown and is fragrant. Set aside. Tip: Once the coconut is toasted, remove it from the pan right away and place it in a bowl, otherwise it will keep on toasting!
Peel off the green skin of the mangoes and discard.
Using a medium to large size grater (the kind you would use for cabbage salad), grate the yellow-orange flesh of the mangoes into a mixing bowl. Note that there is a large flat stone at the mango's center.
Prepare the dressing by mixing together all the salad dressing ingredients in a bowl or cup. Set aside.
To the bowl of shredded mango, add: bean sprouts, basil, spring onions, cooked chicken (or shrimp or tofu), plus half the toasted coconut. Toss well to combine.
Add the dressing and toss again.
Place on a serving platter. Sprinkle the nuts over top plus the remaining toasted coconut, and enjoy!
Make Ahead Tip: To make this salad for a party, grate the mango ahead of time and place in a covered container in the refrigerator. Also toast the coconut, prepare the dressing, and have the rest of the ingredients close at hand. Then when your guests arrive, simply put together, toss, and serve!

Roasted Curried Fruit

In the Autumn I love roasted fruit with curry, any canned fruit assortment, (I like pears, peaches, apricots, pineapple) just a little of the liquid from the fruit, season with your own tastes with curry powder. Roast in 400 degree oven 25 minutes, serve with pound cake, or ice cream, or just dish up a serving plain. Very tasty.

thats a great recipe, i'll have to remember that....

i belong to a international food cooking group and we alternate countries every month....my hope is to also start a cooking international group in puna when we finally move out there....for those interested in cooking/learning about foods in many countries....any takers - mella you can be the first to join?

Only because I have so much,
bilimbi in curry soups & stews (along with bitter melon for bite) for lemony tartness
bilimbi in friut salads for crunchy lemony tartness
bilimbi in chicken or tuna salad for crunchy lemony tartness
papaya in chicken salad for sweetness
green papaya salad (use 1-2 papaya instead of Noels' mango & add a knuckle of grated ginger)

PS. Anyone want Bilimbi???

I like Bbq'd pineapple. cut into slices, then quarters or 6 pieces per slices, skewer them, piece per skewer for appetizers, then sprinke with a little bit of brown sugar then grill for med grill marks on each side, then serve.

We have done the grilled pineapple with br sugar and cinnamon...also try it with peaches!
