In-and-Out burger in California (and wherever else they are) served fresh french fries with the skins on... you could watch them pop potatoes into the big slicer and see all the little ready to cook fries come out. They also served fresh lettuce and tomato. They made a fortune doing that. 
I would love to see more of that here. Maybe someone will start up their own that will become the rival to all the burger-chains.
