Does the many resort room installed air conditioners use any water?

Not really. The large resorts will have a chiller system, in which the cooling tower does contain water, but doesn't really use water. The cooled air is ducted through the building and individual rooms can still have thermostats that control dampers and fans to regulate the temperature. They are much more efficient than individual room units.
