Have you tried Ecuadorian Ceviche? Most of the most popular ceviche comes from Peruvian restaurants, and Ecuadorian restaurant. If you like Mexican ceviche you will absolutely love Ecuadorian ceviche. We have something called "lambi" where my family and I come from. It is actually raw conch (i think that’s how you spell that :-) cooked in lemon and lime juice and a tomato, red onion, green pepper, and baby cooking peppers all mixed in. The best way to have it is on the beach from the traveling vendors (better than any restaurant could ever make) and they serve it in shells with shell spoons, an extremely cold beer and you are set.
