I've never even heard of Ecuadorian ceviche before, but it sounds terrific. I once went to a Peruvian restaurant in New York, but I'm not aware of any Ecuadorian restaurants there or either Peruvian or Ecuadorian restaurants in Philadelphia. I'll have to find out whether our local Spanish restaurant, which serves several types of ceviche, ever has Ecuadorian ceviche on its menu. Thanks for the tip.
