1. To have any chance at all, you have to go above and beyond in your first year. Offer huge portions. Smile and wave. Fawn and fuss. Offer more than one napkin. No stink eye. You are going to lose money while you build your customer base; that's just the way it goes.
2. Most new restaurants fail. Like 90%. Only open if you really like your odds.
3. Do not open a restaurant in a location that has just lost half its customers due to lava flow.
4. Do not open a restaurant in a location less than a mile from a new mall under construction featuring half a dozen new restaurants.
