When I ship birds in the lower 48 they are delivered to whatever address I put on the express mail label...my guess is they would deliver the birds to wherever you get your mail.I would check with the Express mail office to make sure how delivery will be in your area.
As for the latin names, since a Greylag is a domestic bird, it will not have a particular latin name assigned to it....sort of like all chickens regardless of breed are Gallus gallus. I think the breed name is simply put in quotes.
I hope you get your geese soon....they are alot of fun
