As Rob said, Priceline is a great option too. You can go to www.biddingfortravel.com, scroll down to Hawaii-Maui, then click on Maui. It shows what people have gotten for their bids on Priceline. If you click on Maui Hotel List, it shows what is generally awarded in each star level, although they emphasize you may not receive a hotel on that list.
