there should be a law about providing a fair notice before lay off imho

The workers have it better than the vendors. At least they (usually) get paid. When a restaurant is losing money they continue to run it as long as they can by extending their credit with vendors, knowingly or unknowingly. They don't pay suppliers until they're cut off, and it's hard for vendors to collect when the restaurant owes everyone else money, landlord, electric company, etc. Get in line.

The sad thing is - most of these kinds of situations are planned out to take advantage of both parties it seems

In this case an out of town / state employer has loyalty to neither....two weeks of severance pay would not be a blip on the books.

If the vendor extends credit - at least there was some choice involved and the losses can be deducted after a fair attempt to collect

apples and oranges, imho

Most of the time and speaking from experience, the vendor is completely unaware of a restaurant's financial problems, so there's no "choice."
It takes time and money to try and collect which becomes an additional loss. Then when deducted from taxes it's about 30 cents on the dollar.

On the topic of good food, any place you can see the kitchen generally means it will be clean and sanitary. That may not affect the flavor of the food, but for me cleanliness is a part of good food. I've seen a lot of restaurant kitchens in my day, maybe 20-30% would pass a spot inspection by the health department.

I'll second Hilo Rice Noodle. LOVE their lemon grass chicken with rice, and their bun combo. Not sure why they hide (a sign or something would be a good idea), but hey, more for us.
