I am looking for a source in Puna or Hilo for local grown/bottled avocado oil! It is awesome to cook with when you need to use a really high heat since its smoking point is much higher than other oils.
Any suggestions? At $22 a bottle at Safeway, I would rather support something local. (Oh yah and just a dribble is awesome with balsalmic vinegar and mozzarella slices!)

Since we're talking about eating avocados I just had to jump in. When guacamole dip starts getting old, here's another simple way I enjoy them:
Slice the avocado meat as beautifully as you can (This is a Japanese theme so aesthetics are as important as taste) Mix wasabi with soy sauce in a shallow dish. Some kinds of wasabi can be deadly hot, so dilute with caution. When you dip the buttery avocado slice into the shoyu, it magically turns into fish. Don't know the science behind it, but it makes my taste buds scream "sashimi!" Of course nothing beats authentic toro sashimi (fatty tuna), but a buttery avocado slice is a nice, tasty, alternative that doesn't cost much money. And if you use your imagination, you can make it taste like toro. Then get a bowl of sticky rice, some pickled ginger and you're good to go :-)

Glad you liked it. The beauty of an avocado is it has multiple personalities (the plant world's version of Sybil? :-): fruit or veggie, Mexican or Japanese, it can be whatever it wants! Just another reason to save your tree :-) Tim

Descale them if you intend to consume the skin. - Get the grill going... - Rinse the fillets... pat dry - Rub both sides of the fillets with olive oil - Season both sides with Hawaiian salt and freshly crushed pepper - Lay one fillet skin down on a piece of heavy foil that's been greased with olive oil (large enough to fold over and cover the entire fillet - spoon the guacamole unto the fillet (be generous) - Gently lay the other fillet on top (skin up) - Fold over the foil and seal the edges. Be careful not to press down on the fillets while you do this. - Grill - I used about 8 min per side for about 1lb of fish. Vary this depending on your preference for doneness. It sounded like a strange thing to do but it came out tasty. The onions, cilantro, tomatoes, avo, peppers, soy, and lime juice complimented each other and the fish. Noel http://HiloParadise.com |
