I like my food spicy, but see no fun in torturing myself with eating something so spicy that they use the word "death" as a marketing tool.

Centipede; Blairs hot sauces not only are beyond hot, they add a unique flavor to most any dish when used by the round toothpick tip full. Best hot sauce I've ever found. And as a life long chili-head I've tried a bunch. I'm planning to grow the Naga Jolika as soon as I get seeds. The red savina habanero are up and doing fine.

Personally, I don't care for food that hurts. However, while on this subject,it has brought back a memory of my high school days in Guam.

We used to mix ground Guamanian hot peppers with alcohol, and then soak cotton balls in the mixture. After the balls dried, we would take them to class, light them with a match, blow out the flame and allow them to smolder, and the class would be cleared out in minutes with a vapor I can only compare to tear gas. Couldn't breathe, couldn't see, throat on fire, terrible cough. Class over.

This stuff can't be good to eat!

I certainly agree, there are hot sauces that are just hot without flavor and there are hot sauces that add flavor to any dish. I think the hot sauce lovers developed unique taste buds and what is "flavor" to us might taste like "poison" for others. [Big Grin]

The GET is 4.1666% in Hawaii, except on Oahu where it is 0.25% more. I have tried "hot oil" in making stews, but the taste can't be compared to the hot sauce.

Not all peppers dry well.
Only the less pulpy varieties are normally dried.

While I don't know how all the peppers dry, I grew up in Hungary and we dried all kind of peppers there.

I could be wrong. I was just repeating what the guy at the local vegi supplier told my during a pepper discussion. I had mentioned how much serrano peppers (one of my favs)looked like the kind normally found dried in latin markets. He was explaining why serranos wern't dried. He said they would likely rot first. He could have been full of poop which I then spread.

I'm interested in making my own hot sauce, so I looked at Epicurious (nothing there) and Food Network where I found one (http://www.foodnetwork.com/videos/tylers...e/644.html). The process and ingredients are simple, but that makes me wonder how others are made. Can anyone post a recipe?
