Esnap; Can't believe you throw out the tastiest part of the bird. must be the result of a misspent childhood. the dark meat is the only reason to eat the things. Brining is of course required to get the best out of the bird.

OK, you've convinced me to try this brining. Growing up vegetarian I didn't learn tricks about cooking meat.

went and checked my apples ... sadly, only two of the 5 have tags still, and they are both ANNA. Since you're interested, instead of going OT here I'll put a topic on it in the gardening forum.
