Where to find a cannoli
#11
Italian dessert made of a "little tube" - which is kinda more a big tube - of crispy pastry with a whipped creamy (ricotta, marscarpone or a custardy) filling, often pistachio

Here's one for chocolate chip cannoli:

For dough

* 1 1/2 cups all-purpose flour
* 1 tablespoon sugar
* 1 teaspoon unsweetened cocoa powder
* 1/2 teaspoon ground cinnamon
* 2 tablespoons chilled unsalted butter, cut into cubes
* 8 tablespoons limoncillo or other lemon or orange liqueur

For filling

* 1 pound (2 cups) fresh sheep's- or cow's-milk ricotta, drained 1 hour in cheesecloth-lined sieve
* 3/4 cup superfine sugar
* 1/3 cup miniature chocolate chips
* 4 tablespoons candied orange peel, chopped, or finely grated zest of 2 oranges
* 1 teaspoon vanilla extract

To fry and serve

* About 8 cups vegetable oil
* 1 egg white, lightly beaten
* Confectioners' sugar for dusting (optional)

* Special equipment: deep-fat thermometer, 4-inch diameter round cookie cutter, 6 (roughly 5 5/8-by-5/8-inch) metal cannoli tubes

Mahalo for all the responses. I will check out a few of the ideas and report back on any findings.

I would try making them, but that is probably way above my pay grade!

Abe, I also love the typical custard/marscapone ones...the West Side of Buffalo (NY) is the Italian side...oh boy the bakeries were unbelievable.

I do love to cook and seek out and try new recipes. But, frying ANYTHING in hot oil scares me silly. Do they even make the Fry Daddy or Fry Baby anymore?!

Yep, grew up in NY also and always took a good cannoli for granted.

Yes the still make them, and there are a number of deep fryers styled after those two, many with vapor controlling tops that help eliminate splatter & that greasy gunk all over the kitchen.

Thanks everyone for the description of a canoli/cannoli! I have an Italian friend who's a very good cook so I'll be asking him about them and hopefully he'll make one or two!

Can't believe I've never tried one...

My friends fantastic cook Italian wife dips one end in chocolate with powdered sugar on the other end. the filling is sort of custard consistency but I think is the ricotta variety. Really good.
