M222 - Haven't dried any figs yet, I can't seem to get past eating them fresh, & getting to them before Bill does. It's a contest to see who can get out there earliest to get the ripe ones first!
We'll be moving here full time next month, & I'll have my food dryer & books here then. so, if I can find out how to dry them, I'll post.

We purchased a miniature fig at Rozette's 3 yrs ago on Father's day. All this past year, it has been producing lots and lots of figs - enough so my mom eats a few and the birdies can still get a few.

I'm a novice with figs. Just how do you eat them fresh? Do you peel them and then eat the inside....?

Personally, I chow down on everything except any remnant of the stem that may have stayed with the fruit. If the birds are sampling too much and are not willing to share, it is a judgement call whether I bother to cut out their sampling area. I trust they are not carrying West Nile - LOL.

I have a white kadota which is very productive but have the same problem with harvesting. Harvest anywhere near ripe and there are fruit fly maggots in them. Harvest too early and they are inedible and somehow the fruit flies get to them unless in something sealed, in which case they quickly rot and ferment. I've basically given up on having anything other than one here and there, and even then I fear biting into a mouthful of maggots.

Well I listened to everyone here...My first "ripe" fig of the season taken from the bottom was "delicious".I cut off the stem...washed it off with cold water....sliced it in half and downed it. SWEET!! I've been watching them daily and they turn very quickly when just about ripe so I have to be right on it or the birds and insects will.
