We have a good crop of pineapples coming on, mixed yellow and white (all from cut tops we have eaten). Is there a way to tell when they are ready to pick? I waited too long for the last one.It turned out to be over-ripe, so I am trying to avoid that.

You can simple pull the leaf from the center of the top of the fruit. If it releases without being forced, then it's ready. Usually, when it's turned mustard yellow is when it's over ripe. When they are over ripe, I have used them to marinate my chicken, with a 1/2 cup coconut milk.
The leaf pull is the method I use
