Obie's suggestion is an old, faithful one. Many of us imu-less folks have had no complaints regarding the good ol crock pot kalua. But make no mistake about it - nothing comes close to goods that are made in the imu. The flavors of all the elements just can't be duplicated in a slow cooker. Salting is an important part too.

If you don't want to dig maybe you could try a Samoan style "umu."
It's basically an above ground imu.

Great video!....yeah I've made crock pot pork before. It's delicious, but it's just not the same. The smokiness isn't there I guess. I think I'm gonna try a turkey in a small hole. I can't think of any kiawe trees in puna though Sad do they sell kiawe wood at any stores? A trip to Mona doesn't sound to bad anyway.....67s!

You don't have to use kiawe, but that's what gives the best flavor.

I have a friend in Waimea who sells kiawe firewood.

Thank you delta! But if I'm gonna drive all the way to waimea, I might as well just get it myself. On the upside, sounds like a good money making opportunity for someone with a truck! Especially if no one is doing it in puna....
