I thought it would be neat to start a recipe thread.....Hawaiian style!

Totally AWESOME macadamia nut dip

1/2 pound macadamia nuts toasted

2 cloves raw garlic

1 packed cup of cilantro

Juice of 1 lime

A pinch of shredded coconut meat

A pinch of salt

A splash of olive oil

Throw everything in a food processor, and blend until mixed. Keep blending and tasting until you find a texture you like. I prefer it kinda chunky Smile

These are great!
Best Burgers (Could use a more Tropical name!)
3 lbs. lean ground beef
3 cloves garlic, minced
2 tsp. fresh grated ginger
2 tbsp. Worcestershire sauce
6 tbsp. packed brown sugar
1/2 c. Soy sauce
1/2 c. Water
Combine all ingredients. Form into 8 patties. BBQ (or can be pan fried). Delicious!

Thanks! Those burgers sound onolicious! I usually eat the macidamia dip with pita chips, but any savory chip will do Smile

Both sound sooooooo good! I bought some local cookbooks as part of a fundraiser for a friends kid. You just reminded me that I need to start working my way through that cookbook!

Right now I am in Kabocha & Lilikoi overload...so here are a few from today

Lilikoi Cheesecake

2 c Graham or Macademia Nut crumbs
2Tsb Butter melted
2Tsb Sugar

1 pkg Light Cream Cheese
1-2 c Nonfat Yogurt (greek honey is my current fav)
1 c Lilikoi Juice & Pulp (no seeds)
3-4 Eggs
(Sugar only if yogurt is not sweetened - as needed)

1. Combine first 3 ingredients & press into bottom of pan (springform is best, but any will do)
2. bake 10mins at 350

3. Combine remaining ingredients (taste BEFORE adding eggs for sugar adjustment)
4. Gently pour over crumb crust
5. Bake ~ one hour at 350 (or until golden brown & slight surface cracks
6. Allow to cool 10 mins, knife ease the edge of the cheese cake from the pan
7. Cool & enjoy

Grilled Kabocha

Medium Kabocha
2 Tsb Cocunut Oil warmed
2-5 Tsb Coarse Salt (to taste)
2-5 Tsb Coarse Pepper (to taste)

1. Slice Kabocha into even sections & clean out seeds
2. Toss sections with Coconut Oil, Salt and Pepper to lightly coat
3. Grill for ~10mins per side on hot grill (monitor, as grilling time will vary based on section width
4. Enjoy warm

Papaya Lilikoi Orange Margarita

Ling Hing Mui powder
Orange section for glass

1/2 c Papaya chunks
1/4 c Lilikoi syrup (sweetened lilikoi juice
1/4 c Orange chunks
1 jigger Tequilla
ice if fruit is not frozen or slushy

1. Rub rim of glass with fleshy part of Orange section then dip glass rim in Ling Hing Mui powder
2. Blend remaining ingredients until slushy
3. pour into center of glass and place orange section on rim
4. Served chilled and enjoy

Here is a quick easy recipe that will have you hooked...

Safffron Lemonade

1 part simple syrup (Equal parts sugar and water)
1 part fresh squeezed lemon juice
3 parts cold water
pinch of Saffron


The Saffron adds and amazing depth to a summertime favorite. Try it, if you have lemons growing in your yard like me, its FREE Smile
