Does anyone know how it is dried on this side of the island?

We dry it in the oven with pilot light on and store in tight containers when dry. Keeps for a long .

Aloha Royalll. It's kind of like lettuce or kale. It dries fast. Usually overnight in the oven does it.. (Pilot light only) Just check it. If it's dry and crunchy, it's store-able..
As an afterthought, we also keep salt and greeting cards in the oven so they stay dry. It's kind of weird, but we do have Christmas and Greeting cards in the oven year long along with drying papaya seeds for planting later. It's a pain when we have to remove everything when we bake, but dry spots are few so it's worth the trouble to take everything out of the oven before turning it on.

Many years ago we used to grow Mamaki commercially and we had a special dehydrator the size of a car to force hot dry air through screens. Solar and regular convection/heat food dehydrator won't work as well, needs airflow.
