I've never been to the Hawai'ian lunch trucks, we either ate at home, or we went out to Shaka's or Humpy's. What are they like? Here in cali, a food truck is 99% a mexican food truck, and there's a million of them, ranging widely in quality.

I was just over there. 5-6 people in line with a light crowd at the tables.
An electrician was working on lighting for the evening. Open until they run out i was told. Menu: 2 Chicken tacos $8 2 steak or shrimp tacos $10 Chicken burrito $10 Steak or shrimp burrito $12 Chicken Nachos $10 Steak or shrimp nachos $12 Chicken taco plate $ 10 Steak or Shrimp plate $12 Chile Relleno Plate $11 Hamberger w/ fries plate $11 Soda $2

Just got home with 2 chile relleno plates.
Good stuff. They had tacos,nachos,rellenos and they will have burritos later today.Someone forgot the tortillas. A few other things along with hamburger and fries. Serving on aluminum plates covered with foil. 4 tables and chairs under shade so you can eat there if you want. We got there early and hugged our old friends.

Seems they navigated the county bureaucracy rather quickly to get back in business. Or did they already have a permitted food truck?

They bought an existing trailer that already had a commercial kitchen.It just took a little fine tuning.
It's actually the State health department they had to deal with. |
