thank you spencer, great article. we have been growing/eating yacon for a few years now. did not know the stem was edible and don't know that i would try, but use the root much the same as jicama. quite tasty. enjoy your articles..

thanks! i havent eaten the stems either, i assume youd want to get them nice and young. and apparently the leaves are used in teas as well. i found a good article explaining the health benefits but couldnt find it again later for reference so i left it out of the article. i really like jicama too! pretty easy to grow that one as well
